Eat like me: Vegetarian meal

My son is wrestling now, and the first thing he said after his weigh in was: “mom, no more quinoa — I can’t lose any weight!”. But, last night, I did it anyway. I think it is really important to give your body a break from meat every single day. And, this meal (and others like it) are delicious, light and I don’t have a super full tummy when I go to bed.

This is the time of year to definitely incorporate a meal like this into your routine! BTW, I did quinoa instead of couscous  . . . . even though I’m not strictly gluten free, I prefer it. And def don’t skimp on the lemon as it makes this recipe.
