Running a little late today, but wanted to share this recipe. If you are on the all vegetable part of the cleanse, make this for dinner. It is very hearty and yummy. You won’t feel like you are missing anything! I did put in hominy instead of fresh corn and omitted the tomatoes as my pot was just packed with vegetables and thought the can of tomato sauce would suffice. Now, if you could only put cheese on top and eat with a tortilla . . . . oh well.
