Dinner Tonight

I’m in such a healthy space right now since finishing off my cleanse. I love that I don’t crave coffee — I’m actually still drinking mint tea! (Let’s see how long it lasts). And I really am into eating as many fruits and veggies as possible. I can’t believe how good it makes me feel (and keeps things moving along too).

Swiss Chard just looks healthy, doesn’t it? I love the bright red colors — and you know vibrant veggies are packed with vitamins. I found a Martha recipe that I am making tonight. It’s fast and easy — I can get it started when I bring the kids home from school and just keep it warm until dinner. I found a couscous salad from Shutterbean that also looks good. The reality is, though, I’d probably be the only one who would like this recipe. I’ll share it anyway. BTW, I love her blog.
