Granola muffins

Breakfast is difficult. My children hate breakfast. I, myself, am a lover of breakfast & brunches. Spicy eggs, sourdough toast, bacon, oatmeal . . .  love it all. But my kids, not so much. So, I’m always on the lookout for something healthy but yummy. These muffins are just the right amount of sweet to keep my daughter interested & my son loves muffins. So, it’s win win for all of us!

These are hearty for sure and there’s a bit of a crunch — I love the texture! Pair this with some great preserves or agave and you have a great breakfast. Great for those mornings when you need to race out the door!
