Sometimes vegetarian just tastes perfect. It was a warm evening and this sounded so good to me. My kids actually ate the whole thing, and I felt satisfied. The portobellos were very meaty and yummy. I put very reasonable amounts of Gouda on top — like 4 small slivers. It melted so nicely.I forgot to get broccoli, so I substituted asparagus. I also used sourdough bread instead of the farmer’s bread. I could see sprinkling a little balsamic vinegar on top too. Just don’t walk away from the broiler . . .
Ok, and well, it’s also the time of year when I love white wine. My manfriend loves to tease me because I really don’t discriminate when it comes to wine (although I’ve had Mad Dog in college, that stuff is terrible). I’m sure if I had really expensive wine that I’d know the difference. But these days, I’m sticking to bottles under $20. This is a really good one . . . .
