Somehow I volunteered to have Easter dinner at my house — literally less than 24 hours after getting back from spring break. Not only did I completely forget that the Easter bunny is supposed to come, now I am planning a dinner for 10 while I am away on spring break!
So, I did what all Hot Mamas should do: Divide & conquer! I ordered a ham from Whole Foods, my mother is bringing a key lime pie, I’m making new potatoes & peas and we are having a version of this salad above.
I love adding fruit to salads. And, spinach as we all know is amazing and packed with vitamins A & C, is an antioxidant, and it really does give you more energy. The crunch of the nuts and the saltiness of the cheese next to the sweetness of the fruit — Yum!
