Having children in my house sometime means giving up and having pasta. I have to admit, I don’t fix it very often — so when I do, it feels like a real treat. And, I know my kids will eat their dinner. That being said, I always try to counteract the carbo loading with veggies and protein.
I made this dish tonight. And I was actually surprised how good it was. Truth be told, I was using the Martha App to find a different recipe and this was the only one that kept popping up (need to call Martha’s office tomorrow). So, I gave it a whirl. I added way more peas and I also threw in shelled edamame. I used fresh angel hair and a little shaved parmesan. Just add a green salad on the side with tomatoes, and you are set.
