As I am preparing for my first Hot Mamas trip to Mexico (more on that later), I have been trying to come up with healthy food that tastes South of the border but doesn’t have the calories or high fat content.
I love little tacos. My kids do too. You can set out the toppings in little bowls and let everyone personalize their own taco. I like the salsa verde, but don’t kill yourself — you can always just use whatever you have on hand if you are short on time. I also put the tortillas in a microwaveable tortilla warmer, and nuke them for a minute. Make it tonight.
