I made this last night for dinner and it was delicious. I had one of those proud moments as I placed it on the table — you know what I mean — when it’s super tasty and super healthy at the same time. My daughter said Mmmmmmm! and that rarely happens. And, let’s look at the ingredients: chicken, kale, sweet potato and almonds — nothing but good stuff.
I did make some alterations to the recipe. First, I used just regular chicken cutlets with salt and pepper and I sauteed them with garlic and s&p. But you can roast them also like she says in the video. BTW, isn’t she funny? I like her. I added silvered almonds and toasted them in the toaster oven and I also added dried cranberries. I added a bit more vinegar too. That’s the beauty of cooking for yourself, you adjust things to your own tastes
